This AIRTime interviews Romer Perez, owner and chef at Apollonia’s Italian Kitchen in Richardson, Texas.
With over 40 years of food and beverage and hotel and restaurant operations experience in all types of hotels as well as free standing restaurants, Romer brings a wealth of knowledge to any team. He has worked at both property and corporate levels with as many as 90 hotels under his supervision. Whether it be a city luxury hotel, conference center, airport property, resort, or free standing restaurant, he has a proven track record of improving quality, service and financial performance in many types of operations.
In 2014, Romer and his wife Heather, decided to venture out on their own and open their own restaurant. They purchased Apollonia’s Italian Kitchen in Richardson, Texas and with the help of his sister, Sheila Santolamazza, a Chef Instructor in Umbria, Italy, have been applying their craft there since! They have created a long list of regular customers and have expanded into a healthy catering business which offers many types of food, not just Italian Cuisine!
